Folleterre’s elderflower cordial — 2023 edition

Ingredients

  • 2.4kg caster sugar
  • 3l water
  • 85g citric acid
  • 3 organic lemons
  • 40 elderflower heads

Steps

  1. Put the sugar in a bucket or basin with the boiling water and stir to dissolve. Add the citric acid or lemon juice and the lemon zest.
  2. Shake the elderflowers to remove any insects and add the flowers to the sugar syrup. Make sure to remove any green stem.
  3. Cover and leave to stand for 1-2 days, stirring morning and night.
  4. Strain the elderflower cordial through muslin and decant into sterilised bottles. It’s now ready to use.

Tips

  • Make sure to only use the flowers, as the stems can give an unpleasant taste.
  • To sterilise bottles, fill them with boiling water before drying them off, or leave them 30 mins in a 100°C oven
None of these babies in the cordial!
