Makes 6-8
Ingredients:
- 1 white cabbage, sliced (1kg)
- 1 onion, diced
- 10g butter
- 1tbsp vegetable oil
- 2 slices smoked bacon, diced (optional)
- 10 juniper berries, crushed (optional)
- 2 bay leaves
- 100ml white wine or 2tbsp cider/white wine vinegar
- Salt, pepper
- Melt the butter in a large lidded pan, along with the oil. Add the onion, cook for 2 minutes on medium heat until it ibecomes translucent. Add the bacon (if you’re using it) and cook for 2 more minutes.
- Add the cabbage, juniper berries and bay leaves. Sautée for 1 min. Add the white wine, let it evaporate for 30 sec. Cover with a lid, lower the heat and cook for 45 mins, stirring from time to time. Add a splash of water if the cabbage is starting to stick.
