Potato and smoked mackerel salad

Makes 4

30 minutes to prepare

Ingredients:

  • 1kg waxy potatoes
  • 1 red onion
  • 4tbsp sunflower oil
  • 2tbsp cider/white wine vinegar
  • 250g hot smoked mackerel fillets
  • Salt, pepper
  1. Wash the potatoes. Boil them in hot water, unpeeled and whole, for 20 minutes, until cooked through.
  2. In the meantime, thinly sliced the onion and transfer into a large salad bowl. Skin the mackerel fillets and flake them. Transfer into the salad bowl.
  3. When the potatoes are cooked, drain them. Peel them and slice them in big chunks. Transfer into the salad bowl. Add the oil, the vinegar, salt and pepper, toss well. Check and correct the seasoning. Serve warm.
