Orange and carrot salad

Ingredients:

  • 3 big carrots
  • 2 oranges (ripe)
  • ½ bunch coriander
  • The juice of ½ lemon
  • Olive oil
  • Salt

 

  1.  Grate the carrots. Transfer them to a bowl. Peel the oranges raw in a plate, to keep the juice. Slice them thinly, add to the carrots with the juice.
  2. Squeeze the lemon, pour the juice in the bowl. Chop the coriander, add to the bowl. Add a dash of olive oil, a pinch of salt, leave to rest an hour or two in the fridge before serving.
