Ingredients:
- 3 big carrots
- 2 oranges (ripe)
- ½ bunch coriander
- The juice of ½ lemon
- Olive oil
- Salt
- Grate the carrots. Transfer them to a bowl. Peel the oranges raw in a plate, to keep the juice. Slice them thinly, add to the carrots with the juice.
- Squeeze the lemon, pour the juice in the bowl. Chop the coriander, add to the bowl. Add a dash of olive oil, a pinch of salt, leave to rest an hour or two in the fridge before serving.
